Crunchy Semolina PanCake

Hey there..

Today I will share the recipe of an instant and easy to make semolina pancake.This is an ideal breakfast recipe…loaded with goodness of veggies and semolina which is a low-fat, high carbohydrate food that offers a lot of energy.

Semolina is high in protein and very high in complex carbohydrates.It is  ideal for active energetic people as well as for people wishing to control weight and blood sugar as semolina is made from durum wheat which has a low glycemic index .

Semolina also adds crisp and crunchy texture to the pancake.

Ingredients

Semolina/sooji 2 cups

Curd/yogurt 1 cup

Onion chopped 1

Cabbage 1 cup (shredded)

Carrot (grated)1/2 cup

Capsicum (chopped) 1/2 cup

Water 1/2 cup

Ginger & Green chilly paste 2 tsp

Red chilli powder 1 tsp

Baking soda/Eno fruit salt 1/2 tsp

Mustard seeds 2 tea spoon

Salt as per taste

oil 2-3 tablespoon

Method

Mix semolina and curd in a bowl.

Add the vegetables,ginger and green chilly paste,red chilli powder and salt to the mixture.Mix well.Add water as required to make a batter with thick consistency.Now add Eno/Baking soda to the mixture.Mix gently..

Heat a small karahi/wok/small size deep frying pan.Pour two tea spoon of oil in it.When heated add mustard seeds to it.Allow it to splutter.Now pour the batter in the pan (about half cup).Press gently with the help of a round spoon into a thick pan cake.

Cover the pan with the lid.Allow it to cook on a low flame for 3-4 minutes.Open the lid and flip it over to cook the other side for few more minutes.When cooked,take the pancake out and repeat the procedure to make another round of crunchy semolina pancakes.

Serve hot with green mint-coriander or tomato chutney
